I've basically got the same setup as you. I am running PS3 Media Server (1.8.1.0) on Linux Mint 15, gigabit ethernet to the PS3, with MP4 (H264) files. I have zero stutter, or any issues at all for that matter. The server is a laptop with i5 and no dedicated gpu. I would suggest verifying that the network link is operating at 1 gigabit.
